Easy Southern Greens

I wanted to re-create a quicker kale-only version of Paula Deen's Steak and Greens. The result was
absolutely incredible, I had to share!

Ingredients
2 bunches of Kale, ripped from stems
1 small onion sliced thin
1/2 pack bacon
1 packet beef bullion + 1 cup warm water

1 cup white rice cooked

1. Take 1/2 the pack of bacon strips and quickly cut the bacon into about 1" strips. Fry in large skillet pan on medium heat until moderately crisp, about 10 minutes.

2. Add onion slices, kale, and beef bullion +water to skillet and stir to incorporate. Cover and cook on low about 15 minutes.

3. Serve over rice and enjoy!

Nashville 4th of July

This year we spent the 4th of July down in Nashville with David's Mimi and Grandpa G! It was a warm trip and lovely visit with many of loved family and friends. We had a wonderful stay with Mimi and Grandpa G, their home is a perfect southern retreat. This trip could otherwise be called an 'eating tour' of Nashville, Brentwood and Franklin - and I could not have been happier!

These trips are never long enough, there are so many places and faces we wish we had seen. Perhaps next time and not before too long!

Baby's Chili

Going to try this for our almost 1 year old boy, and no that is not David in the chili costume.

Baby's Chili

1 tablespoon olive oil
1 small onion, finely chopped
2 stalks of celery, finely chopped
2 cups vegetable broth (no salt - or make your own.)
1 cup cooked kidney beans
1/2 cup ground turkey or beef - cooked
pinch of pepper, garlic powder, turmeric, cumin
In a large pot saute the onion and celery in the olive oil until tender.
Add the broth and cooked kidney beans.
Bring to a boil, add the meat and then reduce heat to low.
Simmer 1 hour.

Serve as is or mash/puree if your baby is not accustomed to chunks and texture. Use a potato masher for babies who enjoy texture.
