Eggnog Cookies

Had a hankering for holiday cookies and a carton of eggnog in the fridge. After perusing allrecipes.com , my favorite place for recipe help, I found a few recipes for eggnog cookies. Taking one of the feedback suggestions, the cookies turned out SOFT and delicious. As long as you keep them in a container after day 1, they'll get even yummier.

  • 1/2 c. white sugar
  • 3/4 cups brown sugar
  • 3/4 cup butter, softened
  • 1/2 cup eggnog
  • 1 teaspoon vanilla extract
  • 2 egg yolks
  • 1 teaspoon ground nutmeg
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon

Oven 300. Bowl 1: Combine flour, baking powder, cinnamon and nutmeg with wisk. Bowl 2 (big): With a mixer, cream sugar and butter until light. Add eggnog, vanilla, and egg yolks; beat at medium speed until smooth. Add bowl 1 and beat at low speed until just combined. Do not overmix.

Drop by teaspoonfuls onto ungreased cookie sheet 1 inch apart. Bake 17-20, or until fork comes out clean from cookie. Cookies will not turn brown on top.

Some allrecipers said to frost with yellow tinted frosting for a more holiday look. If you've got more time, go for it.

For those of you who aim for a lovely and perfect holiday but just can't seem to iron out the wrinkles: please note the shopvac under our tree. This is to keep our kitty from eating the branches and puking them up on a daily basis. So far, one pine needle puke this season and counting...
